Brazilian Cocoa, Three Ways – How Origin Shapes Flavour

Brazil is a surprisingly diverse cocoa origin, and its regional variation offers a fascinating lens through which to explore how terroir, genetics, and post‑harvest practices shape flavour.


As part of ongoing work to better understand these influences, Tree2Bar has produced three limited‑edition 74% bean‑to‑bar dark chocolates, each made from cocoa sourced from a different Brazilian growing region.


Each origin expresses a distinct sense of place:

🍫 Bahia — Deep, traditional cocoa with a bold smoky note that’s instantly recognisable

🍫 Pará — Balanced cocoa profile with bright acidity and fresh fruity notes

🍫 Espírito Santo — Strong cocoa notes complemented by a hint of coconut, finishing with a lingering bitterness and astringency


Together, these chocolates showcase how differences in regional climate, cocoa genetics, and post-harvest processing can influence cocoa flavour development.


Understanding these nuances is essential for anyone working cocoa quality and fine‑flavour cocoa.
